Sodium Stearoyl Lactylate is a synthetic emulsifier which is made from vegetable oil and starch, does not contain lactose and is dairy-free.

As sodium stearoyl lactylate is generally vegan, as it is derived from the plant-based lactic acid and stearic acid. Labels should be checked as animal based sodium stearoyl lactylates are also available.

Sodium Stearoyl Lactylate is made by reacting the lactic acid and stearic acid (fatty acid) to form an intermediate called stearoyl lactylate. It is further partially neutralised with a sodium source.

The raw materials of sodium stearoyl lactylate, lactic acid and stearic acid do not contain gluten, hence, it is gluten-free.
