Sodium nitrite is used in food preservation, chemical synthesis, analytical chemistry and industrial processes. It helps preserve and maintain color in processed meats, serves as a reagent for producing diazo and other organonitrogen compounds, acts as a corrosion inhibitor and is medically used as an antidote for cyanide poisoning.

Sodium nitrite has the formula NaNO₂, whereas sodium nitrate has the formula NaNO₃. The key structural difference is that the nitrate ion contains three oxygen atoms and acts as a slow-release and on the other side the nitrite ion contains two oxygen atoms and acts immediately to stop bacteria. 

Sodium Nitrite is an important reagent in dye chemistry for diazotization where aromatic amines are converted into diazonium salts. These intermediates subsequently undergo coupling reactions to prepare a variety of azo dyes.
